Comprendre des phénomènes physiques, chimiques et biologiques qui déterminent la qualité des aliments pour développer de nouveaux aliments et de nouveaux procédés alimentaires

Domaines d'expertise

Etude des phénomènes induits par des perturbations abiotiques et biotiques sur des systèmes macromoléculaires, des micro-organismes et des matrices complexes représentatifs des aliments et du vin. Les perturbations étudiées sont naturelles ou technologiques et sont caractéristiques des procédés de production et de conservation des aliments (et des ingrédients) et des micro-organismes. La complémentarité entre les approches « physico- chimiques » et « biologiques » permet  par exemple d’étudier le lien entre la composition chimique complexe des aliments ou du vin et les activités microbiennes. Cette stratégie permet également de comprendre les propriétés moléculaires des produits issus du métabolisme microbien. Les compétences en ingénierie des procédés permettent d’intégrer ces connaissances dans le cadre du développement de nouvelles stratégies ou de dispositifs innovants de production alimentaire (incluant le vin et les emballages).

Axes de recherche

La démarche permet de développer des procédés à partir de la compréhension des propriétés intrinsèques des matrices alimentaires, du vin et des micro-organismes. Les activités de recherche de l’unité concilient donc naturellement la recherche fondamentale (sur des processus liés à la réactivité ou la mobilité moléculaire dans les aliments et le vin ou les mécanismes d’adaptation et de résistance des micro-organismes aux perturbations externes) et les applications industrielles sur différentes thématiques:

  • Développement de nouvelles sources et de nouveaux ingrédients alimentaires (protéines, microorganismes, biomolécules, substituts du sel, du sucre…)
  • Développement de l’utilisation de la flore microbienne d’intérêt (probiotiques, ferments) dans le contexte alimentaire,
  • Maîtrise des risques alimentaires (pathogènes, allergies, contaminants, intolérance…),
  • Amélioration de la préservation des aliments, du vin, des microorganismes et des biomolécules,
  • Amélioration de la qualité sensorielle des aliments et du vin,
  • Amélioration de la durabilité de la production des aliments et du vin (conservation, emballages, gaspillage…).
  • Fonctionnalisation (emballages intelligents, compléments, probiotiques, alicaments…) et spécialisation (âge, activité, …) des aliments
